Close! They are cardoons. They make lots of seed heads the chickens love to work on. I believe the edible portion is the center of the leaves which is like giant celery. I tried to cook it once, it was too much bother. I love the plants and flowers though.Very nice! What are those big bushy plants in the back, left of the picture? Artichokes?
I read about cardoons before. I guess the leaf stems need to be peeled before eating, right? I wonder if regular Globe artichoke stems can be eaten too? I planted 5 of them last week...
Thank You! I think I also read that artichoke leaves are great for chop and drop mulch.Yes cardoons need peeled and yes you can peel artichokes stems for cooking and eating.
