A trick I used making a 5 gallon bucket of kraut was to simply stir it daily. Prevented throwing away the top layer when it was done. Yours will be tasty, either way.
My kraut is doing great. This Saturday it will have been fermenting for 3 weeks, which is supposedly the time it requires for completion when the fermenting temperature is within the 60°F - 70°F range.

I will taste it Saturday and if it's to my liking I'll transfer it to quart jars and store them in the fridge. I'll keep a smaller jar of kraut in the fridge for daily use so I'm not opening up the storage jars too often.

The quart bag filled with saltwater held the kraut down below the surface during the entire ferment, and there is no visible mold or kahm yeast. Looks very clean.

Weren't your pullets chicks this past year? They wouldn't molt yet, then, or maybe time has gone by faster then I can keep up with.
They were hatched late March, 2023, so they're now over 18 months old. Some days I see little piles of smaller feathers, and there are a few large (wing?) feathers scattered around but no "feather explosions" yet. Their egg production is less consistent with several days of 3 or 4 eggs, but they still hit 100% at times. I got 6 eggs from the 6 girls yesterday.

I'm making salsa AGAIN this morning. Had to buy 1.5 pounds of Jalapenos yesterday. I could not find any approved recipes where the salsa is processed in quart jars (all I have left now) so I'll process them an extra 5 minutes and keep them in the fridge. Should be safe, I hope. I'll open and eat the quarts first.

ETA: Since there are no approved recipes for processing salsa in quart jars I broke down and bought a dozen pint mason jars. Might as well do it right.

ETA2: Ended up with 7 pints, plus a half pint in the fridge.

I like Shrimp Russulas, Elfin saddles, and Pine mushrooms. Boletes make great seasoning powder dried and ground.

@PopoMyers , I finally figured out what your Shrimp Russulas are. I'll have to try one since I've see lots of them growing around here. Deer (or squirrels) seem to like them.

I went looking for chanterelles again and didn't find any, but I did find a couple of lobster mushrooms. One was slimy, the other was a keeper. I've never tried one before so it'll be a new experience.

Lucky you! I haven't gone out hunting yet, but might this weekend. Chanterelles seem to be plentiful on Facebook marketplace. $5 a pound seems to be the cheapest I've ever seen them. I'll be checking my usual spots.
