I tested my canner pressure gauge. Since I have experience working on air compressors and compressed air systems, doing the test wasn't outside of my capabilities.

I pressurized the canner up to 11 psi, and two different tire gauges showed it was actually 9 psi, so it's a couple pounds off. Probably should get a new gauge if I ever decide to pressure can anything.

But I'm more into freezing stuff. Things that I would preserve in canning jars could be water bathed anyway, like salsa, jam, maybe even some homemade ketchup. I think I'm going to have a lot of tomatoes to deal with eventually.

My canner has a vent tube with a one piece 15psi weight on it. I was thinking about getting a 3 piece weighted gauge so it could be used at 5, 10, or 15 psi. Wouldn't need to get a new dial gauge then, since I could rely on the weight for pressure regulation.

Weighted is nice in that you can tell how it's doing by the sound.

That’s the same thing I’m wrestling with. Mine has only the 15 lb weight too. I figured I’d see how close the guage is when the weight starts jiggling.

It's a 3 piece that can be configured for 5, 10, or 15 PSI. I determined it would fit my canner by doing some searching and cross referencing on this site:

Mine has the weighted regulator with the three different PSI indicators. It will jiggle when the pressure is right. It's is a new function for me, so I'm still learning and have to read the instructions every time I can. Well, I only can once a year. I don't remember things that far back. I can barely remember what I did yesterday. :lau
 
I always can my tomatoes in a pressure canner, but then I first turn them into marinara. I haven't just canned tomatoes. If I don't get a good yield, which has been the case the last few years, I will buy my tomatoes at Jeremy's.

A couple years ago I invested in a new big canner. Mine was not holding a seal well, even with a new seal. This one doesn't require a seal; it's all steel. It's a wonderful canner, but just so big and heavy. I got it at Bob's. They have every canner you can want and all the supplies.
Whats the brand name on the New Canner?
 
I have an All American. It's very nice. No need for gasket.
It is an investment, but high quality! I have a older Presto aluminum weighted canner, I only use for canning, and I have a Zavor Duo 10qt I use for regular cooking , it clams it is made of 18/10 stainless steel but is is made in china so who knows.

I have a glass top stove I use with my little pressure cooker I use sometimes for cooking dried beans and have had no problems. But for my big canner, if I use it, I'll set it up outside and use my big propane turkey fryer burner.
