I cheat on making mine.
I steam the cubed taters, in a steamer pot and add to a big soup pot:
Cut up pre-cooked bacon (Costco) and diced onion & granulated garlic.
Cook the O's til clear...
Add some chicken stock, add the steamed taters, add some half & half (fat free half & half OR lactose free milk, if you like) and to thicken I use the instant mashed tater flakes.
This takes about 20 minutes til done...I cheat !![]()
I do the same recipe and add:
1 tsp or less liquid smoke and a can of pink salmon for "Smoked Salmon Chowder"
OR
1-2 cans corn for "Corn Chowder"
OR
several can clam liquor and a bucket of live steamers for "Clam Chowder"
So far, the smoked salmon chowder is a big hit around here.
That highlighted part right there. OMG. We can't keep the stuff in the house. We will use it on everything. It is the best thing to have on hand for baked potatoes. Nice quick easy dinner there since I nuke the spuds.
And you and justbugged using the instant spuds for thickening, that works good. Mom uses it to thicken stew since she's allergic to wheat. It makes a wonderful thickener.
Well the razor clam dig was this weekend. We didn't go obviously. I'm not even up to going and collecting steamer clams and those I can sit on the beach and just pick them up and check size. hmm. Dang I want chowder now. I think I have some razor clam meat in the freezer still.
