Well... it worked and didn't work... The edges were starting to over cook at an hour in the oven, and the poking stick came out clean. But when I flipped it out to cool I found out I made a wonderfully dark rich lava cake!!!

Definately NOT what I was expecting, so next time I will cut the recipe in half and try again. Just not today. lol It sure smells nummy though! lol Like I said, its an experiment. lol

I took some dough out of the tote in the fridge, will be baking some fresh bread this afternoons.
 
I don't think using all oat flour will work well for a cake. Without the gluten it is a completely different beast.
Here's a tip:

Substitute oat flour for up to half of the refined flour in quick bread recipes and recipes for pancakes, waffles, cakes and muffins. Add 1 to 2 tsp. baking powder per cup of oat flour, as it requires more leavening than other flours.

Chickielady will probably have great ideas as she cooks gluten free.

LOL it is quite tasty! Might have to remember this one for future reference. lol Even though it wasn't meant to turn out this way. lol I'm thinking maby following the directions to bake at 350* might be a little off... I think this batter might do better at 375*-400*

I have a heavenly amish bread recipe... I just wish I could figure out how to make it NOT so dense... I love to bake, but everything I know is all self taught. So far I havnt had any HUGE failures, everything has come out edible so far.

I would love to take some courses out at O.C. But I can't justify spending that amount of money on cooking classes...
