I just made GF chicken and dumplings. Was doubtful it would work when I looked at that odd looking dough made mainly of beans, but it worked, and better yet, the whole family loved it! (Not as yummy as brownies).
Olivia did poorly on the GF last week, her arms turned red again and her belly poofed up again. She ate lots of donuts at the chicken show (Grrrr!) and I was too tired to make lunch school mornings, so she bought her favorites at school: mac and cheese, Ivars clam chowder, and Wednesdays are "Breakfast for lunch" days, so she had pancake-on-a-stick. That just sounds wrong! I thought school food was nasty when I was a kid; everything was coated with gritty cheese. and you could roll the insides of the bread rolls into bouncy balls. Schools don't make anything fresh anymore. The kitchen is a big re-heating facility with no means of cooking anything. The unicycle team does a big gumbo feed each year for a fundraiser, and anyone cooking is given the recipes to cook it at home, then bring it all back and dump it into a big pot to serve.
