Thanks a lot for all the helpful tips! I think I'll try either hanging up the food/water... or should I put them on a block.... Now there are too many good options! 

I say water on a paver aND hang the food. If you hang the water, they'll get it everywhere!

I caved and got a 2 gal bucket and put nipples in the bottom, so much less mess, always fresh clean water, my crew had the nipples figured out in about 40 minutes, perfected in a day. I was cleaning those waterers 3 or more times a day. Food has been fine up on a 2x6, nobody has tried to roost on it...yet. Now I just have to figure out what to do with the grit, flat dish on a 2x6 piece isn't cutting it, they walk on it and get it full of shavings or dump it out.

You can hang your grit also, I use a chick feeder. For water I am using these water nipples in a plastic pitcher $3.23 from Walmart. I have the pitcher on a wood platform, they work great.
