I just read through your yummy bagel recipe again. When it says to boil them, are you just using plain water?

We add a good squeeze of honey to the water. I've heard as many opinions on this as people to whom I've spoken about boiling bagels...lol. Plain water will work, and the longer you boil, the chewier your bagel will be (anywhere from 30 seconds to two minutes a side). The honey, barley malt extract or baking soda added to the water is, to the best of my understanding, about browning the crust. I should update that blog post to mention that! Yes! Same concept exactly.While I haven't made pretzels in FOREVER I do recall a baking soda water step in order to get the browning.
