Speaking of duck. I've got one hiding in the freezer that needs a recipe. Any suggestions?

Nothing fancy for me - just roasted with a bit of garlic and fresh rosemary, mashed potatoes and gravy, home made stuffing, butternut squash and home made apple pie for dessert.

Stuff the inside with stuffing or just use the garlic and rosemary?

Garlic in the body cavity, rosemary across the breast and stuffing in an oven dish - cooked in the duck it sometimes gets too greasy. A sliced apple in the body cavity is nice too.
