Gives them a creamier, more silky texture. There's nothing wrong with using milk at all. I'll use milk if I don't happen to have any cream on hand and be perfectly fine with it. I don't think they taste any different, it's just a mouth feel thing.

Use a bit less cream than you would milk. That's the only prep difference
I'll have to convince one of The Siblings to try that (one of them makes the eggs every morning).
