What about dressed eggs?

OOOHHH, that shrimp version sounds awesome. I'll have to try those!

My uncle used to make eggs with dill relish in them, and also, he would cut a tomato, squeeze out the seeds, and then scrape the pulp off the inside and use that. I couldn't really ever pick out the flavors in his eggs, but they were good. All that's in addition to mayo, dab of mustard, salt & pepper.

I love the baggie thing, and I love Alton Brown, too!

I just use mayo. With the rich wonderful eggs we get, that is all they need. I use a pastry bag to pipe the stuff back into the whites and sprinkle paprika on top. YUM YUM!
 
My recipe is almost the same as jessied1227

except I chop up (very fine) a tiny bit of garlic and some onion and add that - YUM

I use the baggie trick to, makes it so much easier

My DH puts a little dab of hot sauce on his, but he puts hot sauce on almost everything........
 
My eggs are plain, compared to your recipes. I used to use Miracle Whip with mine, but they've changed their recipe in the last couple of years and I don't like it, now. So I use a store brand that tastes like MW used to.

I add as much as I need to, to get a creamy texture. Salad dressing has more zip to it than mayo, so I don't add other things. I use a disposable piping bag, with a fluted tip. Then I sprinkle with paprika. Lately, I've been using a smoked paprika that I got from Penzey's. It's good on fish, too. We actually got it originally for making pork breakfast sausage.
