What age to proccess Narragansent Tom Turkeys

What is the ideal age for a tender turkey, also, at what age do they become too old and tough?

8-9 months is perfect! They will be fine even when they are a few years old. Just age them in the fridge with a brine solution for 4 days or so before freezing or cooking.
