Not good on determining ages, I don't usually keep track of the growth too closely on my own birds. Bird in the foreground has a lot of barring on the wings and back.
They look around 6 weeks, if they keep the barring on their feathers then they are males
Here are some young females at 2.5 months i believe, notice haw the barring is fading away as they molt.

If they love cat food, you can try offering them a little bit from your hand, or offer them some other treats (mine love blueberries!!!).
They will get used to you that way, and get less skittish...
