I'm cookin Garlic-Rosemary Chicken with Brown Rice and Steamed Baby Carrots. I also took the oil, garlic and rosemary that they chicken was in and pan cookin that with red onions as topping on the chicken.

Too hot here as well - we just threw frozen Pizza in the oven and try to stay away from the hot kitchen! Its NASTY here.
 
Leftovers! I cooked yesterday. Mexican Chicken casserole

4 cut up chicken breast
1/2 small onion

Cook both until good and brown

Add 2 Tsp Taco seasoning (I think the stuff is too over powering to use the whole packet)
1/4 cup water

Mix it good in with the chicken & onion. keep cooking until all the water is gone.

Then add
1 can drained black bean
1 can refried beans
4 oz cream cheese
mix it all together and heat until hot.

In a large casserole dish (don't forget to spray it with PAM)

Layer 2 handfuls of crushed taco shell or chips
Layer of chicken mixture
Layer-1/2 cup salsa
Layer- 1/2 cup mexican cheeses--Fiesta Blend from Wally World is good

Keep layering until you run out. Finish with salsa & cheese.

Bake in 350 over for 30 min.

TADA!
 
That sounds delish! We had roasted (grilled) chicken last night --- the first time we've tried cooking one of our home grown roosters on the grill. I was expecting it to be on the tough side, but it was tender and juicy.

Tonight is Egg Pie. The crust is home fries smashed in the bottom / sides of a cast iron skillet. The filling is brocc, mushrooms, onions, cheese and pour in beaten eggs and bake. Hehehe, and to cut down on cholesterol / fat, I use egg whites with just enough yolks to give it color (another plus in having an abundance of fresh eggs).

We are making pizza. The dough is rising, the pepperoni is in the fridge, the other toppings are chopped and waiting. The sauce is simmering on the stove top. Thaks to my goats we have fresh mozzarella cheese. A salad on the side and mostly a coke product as beverage. Ice cream will most likely finish it out.

Can you tell I have children in my house?

I have to agree with you, Southern28Chick. My husband works and brings home the bacon and I have a meal ready and waiting when he comes home in the evening. Besides it is more economical to cook at home and better for you, too. My family says that I cook better than most restaurants anyway.

I figure if we go over there for dinner, it's a win-win situation. She gets to talk to everybody non-stop for a good hour or two (even though we live a half-mile away and are over ther pretty regularly!) My family's Dutch, and everyone is EXTREMELY chatty.

And, the kitchen doesn't get hot and I don't have to do the dishes.
