Oh I'm so excited about these cupcakes. I've NEVER frosted anything with piping bags and tips...I've always used a spatula or knife. I've also never used gel food coloring and I am now in love. The cupcakes are a box mix and the frosting is from a can, but I wanted to use the food coloring and make the adorable little stars and polka dots. The frosting is orange, I wanted it a brighter orange, but I was too excited to use my piping stuff. The stars and dots are plain ole white sugar, a few drops of blue liquid food coloring and a little bit of water. I shook it up (foooorrrreeevvveerrr) in a tight sealing container, smooshed it out on wax paper and used a cookie cutter and pen cake to make the shapes. I let them sit and dry then put them on the cupcakes. Oh I'll just post the link I got the instructions from.

Now, pictures..oh and the liners are actually cute pink/green/yellow/blue striped but since I used a chocolate cupcake, the colors are gone.

I baked a Parsnip spice cake with Ginger cream cheese frosting. It is rather tasty, and the icing was much better than I thought it would be.

I hope to make Brownies with beets later this week.

Love the "make your own stars" etc. idea! Very cute.

Never tried a parsnip spice cake but if carrots work in a spice cake why not parsips? The ginger cream cheese frosting sounds yummy!

Ok folks. I am on a (insert 4 letter word for denying yourself almost everything here)! The horror! I always said that if I ever gained weight I would just have to be fat because I love food too much to do without but my aching back has changed my mind. So I'm asking you all for more pics of all your delicious recipes. Please? It's as close as I can get these days to enjoying these yummy treats. Bring 'em on!

Love your cupcakes!!!! Very inventive!!

My girls made these for a congratulations on you new job party we had this weekend for my oldest daughter. They were out of this world good and very easy to make.

Ho Ho Cupcakes

1 1/2 cups sugar
1/2-cup cocoa
1 1/2 teaspoons baking soda
2 cups flour
3/4-teaspoon salt
1 1/2 teaspoons vanilla
3/4-cup vegetable oil
1 1/2 cups water
1 1/2 teaspoons vinegar

Preheat oven to 350°. Prepare cupcake tins with cupcake paper liners.

Mix dry ingredients in a bowl and stir to combine. Add the liquids and stir with a fork just until blended; batter will be fairly thin.

Pour into prepared cupcake pans and bake at 350° for 15 to 20 minutes, or until toothpick inserted into middle of cupcake comes out clean, cool completely.

Filling
5 tablespoons flour
1-1/4 cups milk
1-cup sugar
1/2 butter
1 cup shortening

Combine flour and milk in saucepan. Cook stirring constantly until thick. Cool completely. Cream sugar, butter and shortening, add cooled milk mixture and beat until very fluffy.

Frosting:
1/2-cup butter
1-teaspoon vanilla
1 egg
1-1/2 teaspoons hot water
3 (1-ounce) squares unsweetened baking chocolate, melted
1-3/4 cups powdered sugar

In a small bowl, beat the egg…stir in the vanilla, melted chocolate, hot water, powdered sugar, and butter.

Cut a hole in the middle of each cupcake with an apple corer and fill with the filling. Then frost.
