What are you baking now?

The eclairs look beautiful. I have a recipe for what my mom called cream puffs. They look exactly like yours and she'd fill them with custard and make a chocolate ganache (chocolate chips and Eagle brand milk...so easy and delicious!) for the topping. Sometimes she would make them rounded using heaping tablespoon and fill them with shrimp salad or chicken salad for showers or luncheons.

Tonight I am baking peanut butter, monster, and oatmeal raisin cookies. Energy permitting (office Christmas party after work), will also be making pizzelles and maple waffle cookies. Then my Christmas baking will be finished. This past weekend I made double batches of chocolate chip, white chocolate/cranberry/oatmeal bars, snickerdoodles and apricot/coconut balls; single batches of icebox sugar cookies, icebox brown sugar nut cookies, chocolate almond biscotti, butter pecan biscotti, vanilla biscotti, Russian tea cakes, and nut wedges.

Would love to be able to make my brandied fruit friendship starter cakes tonight but that might be a little too ambitious.

Hahahaha... my BFF's birthday is tomorrow and every year we do a little party get together at her house with treats, and a Christmas gift exchange. So we combine her bday with the holiday so she thinks its a downer. But her FAVORITE treat is eclairs! So I decided I would make her these for her bday tomorrow rather then bring cupcakes this time. This thread makes me hungry!

I baked 7 doz mini quiches the other day, spinach/feta, mushroom/garlic/parm and sausage/mozz

Everyone liked them so much I mad 6 more dozen last night!
 
Ooooh, quiche! That's what I wanna make for dinner now!

However, this week (or since last Wednesday) I have gone through 14 dz eggs and I think I'm all egged out! hahahaha
 
I only have 3 older girls laying right now...and they take turns...only 1 egg a day for the last week! Can you say Argh?! I have 12 girls who are 3 mos old so I am strapped for eggs right now! Actually bought my first dozen the other day in I don't know how long!

Hard to keep up with the demand for pumpkin rolls and mini quiche on an egg a day!

I have already made plans to "relocate" the older 3 girls and raise up some new chicks to replace them! I didn't realize how much I was taking them for granted until the egg production dropped and of course right at "Baking Season"!
 
Those eclairs are beautiful. My dad loves Boston cream pie, but I don't make it very often, it's a lot of work!

My holiday baking is going to be Chocolate Mousse, Raspberry Cheesecake, plus all the normal stuff for Saturday night's dinner with my family. Then I have to make a dessert of some sort to take to DH's side of the family Christmas Day.

I've been seriously hoarding my eggs and so far (knock on wood) I haven't had to BUY nasty store bought eggs. I was even able to make an Angel food cake last week for my son's birthday. I'm down to 7 in the fridge and nobody better touch them, they are for the cheesecake.

Isn't it against BYC rules to even mention food without including the recipe?!!? You should be banned. I'll withdraw my complaint if the recipe appears post haste.
