Not yet. I spent my days off last week sick and unable to think straight. I am hoping to be able to make them on Wednesday.

Diabetic friendly pumpkin bread is in the oven... didn't get around to it yesterday after the cookies, my back won't let me stand up but for so long these days.

The cashew nut brittle is still a bit flexible... and in hindsight I probably pulled it just a bit too soon after adding the cashews.. but the TASTE is outta this world! The cashews are great, but next time I will use pieces, instead of whole, as they stick out too tall. I also will be more careful when pouring into the pan to get a better and even distribution of the nuts.

Banana Cake is the best homemade cake I ever made... can't get enough it.. (vanilla butter frosting with yellow food coloring & added chocolate chips to make the chocolate frosting. 1/2 is packaged to go for dinner tonight)
Pinto Bean Fudge is in the smaller containers, each piece wrapped in a mini muffin paper.. very good, and fiberfull to boot!

Peanut Butter Cookies in the loaf pan... a couple pounds worth
Pumpkin Pie bottom right... with condensed milk instead of evaporated... YUMMY!

Now I gotta pack up dinner & head over to the in-laws. Taking banana cake & pumpkin pie with for desert.

I'm going to try the cashews next time. If you have a lot of moisture in the air the brittle will get sticky - so you may want to transfer to an air tight container to help stiffen it up a bit. Also, like I said before the hardest part is judging the "light golden color" when cooking. Here a picture of some I made (sorry the picture is a bit fuzzy) to help to see the color. When I made some the other week it was paler then this picture but still good.
