I made the Brown Wafer Cookies. They taste just like I remember, but I couldn't get them really flat. I'm thinking because I kept the dough in the refrigerator the whole time maybe they didn't melt flat enough in the oven. But they sure taste good! Thanks SpeckledHen for the recipe. It was on the side of the Potato Starch Flour box too!
I also made Rugelach. They are a middle eastern/Jewish traditional cookie and very popular here in the northeast. I'm too cheap to pay $6.99 a pound, so I make them myself. They are really worth the effort to make though!
Poor me. A whole fresh pot of coffee and no rugelach to go with it......and no time to bake any. The vet is coming out to see my aged horse who just isn't himself.
I guess you'll have to enjoy one (or six) of these for me! LOL
I will definitely be baking some as soon as I can squeeze a spare minute or two out of a day. I'll let you know how they turn out!

Quick tip when making Rugelach dough, I beat cream cheese and butter in large bowl with electric mixer on medium speed until well blended. Before I start adding the flour I switch from beaters to dough hooks if you have them. It makes it MUCH easier since this is a very sticky dough. Enjoy!
