Here are the hot cross buns and the recipe. They are heavenly!! Last year was my first attempt at them and my DH and I ate two batches (48 buns - oink,oink!). Its a little early for Easter Baking but we wanted them bad.
Hot Cross Buns makes 24 buns
1/2 cup warm water
2 Tbsp yeast
1 tsp sugar
1 cup warm milk
1/2 cup butter, melted
1/2 cup granulated sugar
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
3 eggs
1 egg yolk
5+ cups all-purpose flour
1cup dried currants
1cup chopped mixed candied peel
1 egg white
Glaze
1 cup icing sugar
2 tbsp milk
Mix yeast, sugar and water. Let stand 10 min. Mix together milk, butter, sugar, eggs, salt and spices. Add yeast mixture. Add flour. Add peel and currants. Knead 5+ min. Let rise double. Cut into 24 pieces and place on greased sheet. Let rise again.
When buns have risen, take a sharp or serrated knife and carefully slash buns with a cross. Brush them with egg white and place in oven. In the meantime, pre-heat oven to 400° F. Bake for 10 minutes, then reduce heat to 350° F, then Bake until golden brown, about 5 -15 minutes more. Transfer to a wire rack. Whisk together glaze ingredients, and spoon over buns in a cross pattern. Serve warm, if possible.
