What are you baking now?

Soooo...almost every week I drive with my neighbor about 2 hours to New Smyrna Beach (she has an appt. there...I always find some shopping to do). One thing I always do is hit a little bakery called Love Muffins...I hadn't gone in 3 weeks and yesterday when I went they were closed...permanently!

I actually had tears in my eyes! They had these DELICIOUS pistachio almond muffins I have never found anywhere else.

So I look online for a recipe and all I could find is a pistachio almond cake which looks kinda wet like a banana bread, this is not what the muffin consistency was like.

Does anyone have a recipe for something like that? I'm going to try to make the bread into muffins and see how they turn out but I'm not a great baker so I'm not very hopeful...

i did not bake but a neighbor did!! She showed up this morning with a blueberry pie, she said it was a thank you, we took her around saturday looking for chickens (Roos & hens) momma only had the one roo in our coop and she did not want to sell him yet. so she and momma are at the coop and lady bought one of momma hens, momma left to go buy her another roo. So now we have two a Black Minorca (Avatar) and A BIG GOLD BUFF.

Will be baking raspberry/plum upside down cake in the morning
for my thursday lunch ritual at the farm
where my grooming shop is located....

I always use one of the gals farm fresh eggs as she brings them each thursday.....soon
I will be able to say "This was made with MY girls eggs!"

UNCLE UNCLE - OK I give - have 5 dozen eggs in the frig so going to make the 10 egg pound cake tonight and Costco had Strawberries for $4.49 for 1/2 flat so plenty of toppings. We just have to resist the fresh whipped cream on top

- OK I give up there too! maybe just a little.

The weekend is getting closer and can't wait so I can try some more bread. I have been watching some You Tubes videos on kneading and letting the dough rise. I think I have been over doing it on the raise and want to try a bit less raise time and see if that helps. Also, need to get some canning done too.

Not baking - but we harvest our meat birds next weekend on Sunday since Saturday is opening of trout season and Mark HAS to go fishing (can't deny the guy he is so wonderful he deserves a day fishing for all the great things he does for us) - so need to figure out how to make chicken stock and can it. I use a TON of chicken stock throughout the year and figure I need at least 48+ quarts to equal what I buy.

Sorry to hijack the thread about canning - back to baking.
