Muffin Batter:
1 1/2 C. Flour
1 Tsp. Baking Soda
1 Tsp. Baking Powder
1/2 Tsp. Salt
3 Ripe Organic Bananas/or regular bananas
3/4 C. Organic Sugar (white)/or regular white sugar
1 Tsp. Vanilla Bourbon Extract
1 Farm Fresh Egg
1/3 C. Unsweetened Organic Apple Sauce/ or regular unsweetened apple sauce
* Preheat oven to 375*
Lightly mash bananas in mixing bowl-add sugar, vanilla, lightly beaten egg, apple sauce and mix on low speed. In a separate bowl, add flour, baking soda, baking powder and salt. Add dry mixture to the mixing bowl with the wet ingredients a little bit at a time. Mix on low until incorporated-do not over mix. Using a 12 count muffin pan, add paper liners. Scoop muffin into each liner using a medium sized ice cream scoop. Time to make the Streusel topping!
Topping:
1/3 C. Organic Brown Sugar/ or regular brown sugar
2 Tblsp. Flour
1/4 Tsp. Cinnamon
1 Tblsp. Butter
Using softened butter (soften in the microwave), add brown sugar, flour and cinnamon to a small bowl. Mix all ingredients together until fully incorporated. Sprinkle streusel evenly over the batter of each muffin cup. Bake muffins for 18-20 minutes.
Let cool...if you can wait that long...enjoy!
The only ingredient in this recipe that has fat is the butter for the streusel topping. If you divide 1 Tablespoon of butter among 12 muffins, you end up with just about 0 fat per muffin!
OK you know you are trouble when you take the magnetic kitchen timer outside with you - attach it to the hood of your ride-around lawn mower so you make sure that you go in to check and see if the Pound Cake is done.
Yes, the cake was done, lawn was mowed with 15 minutes to spare, Drunken Strawberries are stewing in the frig and stopping to get cream on the way home to make whipped cream for a nice big spoon full right on top!!

Productive weekend baking, canning and getting our 24 7 1/2 week old baby hens in their new spacious coop. They were like a bunch of little kids running and flying around acting like a bunch of little kids that had been all cooped (no pun intended) in house during bad weather!! So cute to see them happier

Me too! but I just have a little - you know portion control! The Drunken Strawberries is the recipe from MissPrissy a few posts ago. Can't wait to try them tonight! If I tell myself I can't have something when I'm on a diet then I want a lot so better to have a little. Too bad we don't smell-a-screen or better yet taste-a-screen for all these wonder recipes posted here.
