Get a mandoline and slice them up, add some frozen artichoke hearts (I cut off any woody ends), sautee them with olive oil, garlic and leeks, add a little butter and a little cream and pour over baked chicken and pasta. If you have the time, roast the garlic first with a little olive oil brushed on top for 30 mins on 250 F. The Italian eggplant have a less bitter flavor and are fantastic with pasta and chicken (or veal). Serve with a really great artisan bread. MMMMMMMMMMM
I think they would be good in a zucchini patty but I wouldn't substitute them entirely. They absorb other flavors well so mix them with your favorites! Also great in a stroganoff.
Going to a cousin's 80th Birthday party this weekend so trying to make 4 loaves of bread to take - 2 Olive and 2 plain. Going to try KimN_C suggestion and use a crock pot liner for one of the Dutch Ovens. Wish me luck.

I made 4 apple turnovers with phyllo dough and my canned apple pie filling earlier today and now I want to kick myself because I went and ate them ALL!

When I was pregnant with my second son (28 years ago) I got a hankerin' for donuts. My husband was at work and had our only car, meaning there was no way for me to go and get some.....so, I made an entire batch from scratch and consumed them ALL and had the house aired out before he got home....he never found out. Sigh. Those were the best donuts I ever had.
