BettyR I'm definitely ok with leaving out the vanilla; I agree that it doesn't seem like it needs it.

JustBugged I too have clean oven envy.

I love vanilla but it just didn't seem to belong here....and we love it without. I don't think it would hurt anything it's just not a flavor I associate with apple pie.
 
I am going to bake beer bread tonight, and stir a little bit of shredded cheddar cheese and some rosemary into the mix.........Yummy...warm bread with butter dripping of of it........
 
I made this bread for the first time yesterday and it is some of the best tasting bread I've ever made. It smells so good and tastes even better.

Oatmeal Bread
This recipe is very wet and really needs either a large bread machine or a stand mixer to make it.

Cook until it starts to thicken then cool to warm:
2 cups water
1-1/3 cups old-fashioned rolled oats
1/2 cup powdered milk

Mix well and let it bubble while oatmeal cools
1 cup warm water
1 cup flour
1 tablespoon yeast

Put warm oats in large bread machine or in the bowl of your stand mixer and stir in:
yeast mixture
3 tablespoons honey
1/4 cup oil
1 whole egg
3 egg yolks
2 tablespoons sugar
2 teaspoons salt
1 teaspoons dough conditioner
4 tablespoons vital wheat gluten
2 cups whole wheat flour
Whip until smooth, cover and let sit for 2 hours to soften the whole wheat flour, mixture will rise

Then deflate and mix in:
3-1/2 cups all purpose flour

Run the dough cycle through twice....or knead with mixer for 10 minutes then let the dough rise to the top of the mixer bowl and repeat.

Shape into 2 loaves and place in pan and let rise 35 minutes.

Bake in a preheated 350 degree oven for 35 minutes or until internal temperature reaches 180 degrees....DO NOT OVERBAKE
 
I'm waiting for the eggs and the butter to get room temperature then I'm going to make some pound cake.. haven't decided yet on bundt pan or two loaf pans though yet..
also have a beef pot pie in oven made from left over roast from the other night..
also having a cheese cake attack but that one will have to wait till next week and make for Thanksgiving. ( I don't need a whole cheese cake in the house !!!)...
