What are you canning now?

Yeah I'm having trouble too. My mom says it's from using Kerr lids, she claims the Ball lids are better.

I'm glad I'm not the only one and thinkin I'm at fault. I am using Ball lids. I was under the impression that Ball bought out Kerr? I'm sure they did. So it would all be the same. Anywhere I go to purchase lids Ball is THE ONLY brand available.

I seem to have a bit of problems with seals this year. More this summer than all the years I've been canning. Could the quality be going down hill on the lids? I know I'm not

I think she meant the new jars/with lids I bought were Kerr jars and the new lids they come with are somehow not strong enough for pressure canning.

But I bought a box of Ball lids and used them on my new jars and I haven't had any more problems.

That's were I get it. May be they were just out since they never really seems to have as much as the powdered variety. A couple of my grocery stores have canning stuff but a lot more expensive.

Sometimes it's with the canning supplies and sometimes they put it by the jello in the baking aisle in our local Waly World.

The manufacturers' recommend not reusing lids. They can't be guaranteed to seal more than once. However, I have seen "forever" lids advertised on ebay than can supposedly be used more than once. If your are reusing lids that may create a problem. I have not have any problems with any lids this year. I have used Kerr, Ball and Golden Harvest.

Been having alot of trouble with the new silver ball lids this year, they are alot thinner than past years. Had 5 that did'nt seal or lost their seal out 4 boxes:(

I also wanted to mention that you can make your own pectin from green apples. We have young apple tress and needed to drop the fruit for one more year. So we made about 30 3.5oz packages of pectin and froze them. Unfortunately, I haven't made anything that requires liquid pectin yet so can't tell much more than that. Too busy getting jalapenos put up and making other favorite jam/jelly recipes that call for powdered pectin.

WOW! this so good. I searched on line and here is list of variations from the Cooks.com recipe instead of zucchini

2 cups shredded apples or carrots
1 3/4 cups applesauce plus 1/4 cup pineapple
1 can whole cranberry sauce
1 bag whole ground cranberries (not sure what size bag - but would assume smaller)
2 cups canned pumpkin
2 cups mashed bananas
1 3/4 applesauce plus 1/4 cups raisins
2 cups fresh peaches

Another question to all of you. Since this is not a "canning" recipe do you think there would be any harm in doubling the recipe?

I'm not having trouble with the jars sealing I'm having this problem

The jar is sealed, but I'm still storing it in my fridge until I eat it.
I had 2 out of one batch that did this.

I only started making the canned zucchini bread last summer but I just opened up a jar this past week and it was just as moist as when I made it last year so...
For the variations, I have done zucchini, pumpkin & banana. Think I'd like apple too!

I've been canning all day. I did the zucchini bread from tdkmom, the pretty sweet & sour cabbage from marymac, green beans, and tomatoes. Everything looks great except...

...I also had the same thing happen that Catalina showed in her picture. I have never seen anything like this in 25 years of canning so I am not a happy camper!

Mine happened with Ball lids so it's not just Kerr I'm having a problem with. And I had problems with regular canning and pressure canning. Seriously, in all my years of canning I only ever lost like 5 jars due to errors I made! I'll be giving them a call tomorrow to register a complaint!
