What are you canning now?

All of the coupons are spoken for. I've replied to everyone b/c that's how I roll;) I talked to my sis and she told me that she won the coupons off of ebay... for a dollar! So keep your eyes open, maybe someone else has similiar coupons listed!

I just wash it, pick the leaves off and put them on a paper towel to dry on the counter. It takes about 3-4 days to be fully dry (but we live in a dry climate with little or no humidity). Mine don't stay bright green, but turn a dull green. Then I just leave the leaves whole, maybe breaking a little to fit in the spice jar, or put in little zip-lock baggies. That's it!

Thank you for the information. I really need to get out there and trim up the basil.

Jen4, what bounty! The colors are so vivid and bright. I wish I were closer......I'd love to come and spend the day, helping you can.

When I told my elderly neighbor about how we are all putting up food and talking about it with one another online, she said that was how they always did it, only it was in the same kitchen-everyone with their sleeves rolled up and involved from the youngest to the eldest.

I guess that is sort of what we are doing, isn't it?

I wish... oh gosh we have sooo many different peppers, most are hot... jalapeno, Bananas, Cayenne, Habanero, Caribbean Red, and I forget the name of the little red ones... we use them in our salsa and we dry them in the oven then grind them up to make a fire seasoning! Its good, if ya like hot stuff

A friend called last night to see if we wanted canning jars. His mom has decided that she is too old to do this anymore and asked if he knew of anyone who could use them. Don't know how many there is yet but he brought 10 big boxes of jars. I'll have to go through them all tomorrow and sort. We still have zucchini, beets, jelly and saurkraut and pears to do this year so they'll come in handy.
 
tdkmom - 10 boxes of jars... thats nice! My papal is giving us their jars and books, picking them up tomorrow, dont know how many or what shape they are in but they'll sure come in handy... our 2nd set of beets are in and ready for picking, plus all the tomatoes and peppers still. I've only got 1 more case of jars here right now.
 
Still doing sketti sauce. Got an Upper respiratory infection, so that's kept me moving pretty slow. Literally, like only getting 6 qts. a day done. (Thanks to my kids helping) Without them, the tomatoes probably would have sat there...
 
I need some advice from all the power canners out there. I have been canning for about a two years. I always do a batch at a time, but need to improve on doing multiple patches.

So last night I did the prep on peppers and apricots for 3 batches of my signature Apricot Jalapeno jam. My question how would you go about organizing 3 batches to get it done as quickly as possible. Make up all the jars first and water bath all at once or get a batch in the water bath and do another pot for second batch.....

Any advise would be appreciated
