Sure, here you go...

HOT PEPPER MUSTARD

36 hot banana peppers, or other hot peppers of choice
1 qt. generic mustard
1 qt. vinegar
5 c. sugar
1 tsp. salt
3/4 c. clearjel, cook type

Seed Peppers. Put half of peppers and half of vinegar into blender or food processor. Puree together and transfer to pot. Repeat with remaining peppers and vinegar. Add mustard, sugar and salt. Bring to boil over high heat, stirring to prevent sticking.

Mix clearjel with 3/4 cup water to make a THIN paste. Stir into mustard mixture. Boil hard for 2 minutes. Ladle into hot jars, adjust lids. Process 10 minutes in boiling water bath.

Makes 8 pints.

got my first canner Christmas, did a practice boil like they suggested, scared the living daylights out of myself and ended up hiding behind the fridge. The only down side here is hubby was at work and missed it.

Glad to see that there are others out there are/were scared of the pressure canner. I have had one sitting in the garage for years and terrified to use it. I agree with breezy I too would be hiding and glad that we have really high ceilings in the event that it decides to decorate the kitchen. Fortunately, my husband is willing to get me over the fear and we have vowed to start using this year. I too think I'll do some beans and take it slow and easy......

Ok so I think for my first pressure canning experience I am going to use the left over xmas ham, some of the half of ton of potatoes that are in my basement to make a soup. Any one have an easy recipie for those ingredients? I would use the pressure for ham, right? I too will be ducking for cover my first try

I'd
process this recipe leaving out the last 3 ingredients (butter, flour & milk). Those should be added just before you eat it as they will not can well. Any creams and fats should always be added to the soup when you open and heat, not to the canning process. Enjoy!

So how long would you process it for? 90 minutes?
 
I don't understand why everyone is so afraid of explosion. Have any of you, or do you directly know of someone whose pressure cooker actually exploded? I've been canning for close to sixty years and have never had one explode. I've heard the tales yet I have never met anyone, or knew anyone who had direct knowlege of one exploding. I have an American Pressure cooker and with all of the dogs that must be secured I don't set how it could happen. Maybe with some of the lesser madels if you didn't secure the lid properly and then allowed it to overheat, maybe.

It was once pointed out to me by a male family member that I even drive like a girl. Its just my nature. Oh no, I WILL be canning, but seriously, had any of the boys seen me running from the cooker I would have never lived it down. I am in my 40's- I have 3 brothers, none married, my husband has 2 brothers, none married, no sisters. My son is 15, and thinks everything I do is stupid. God did bless me with two daughters, but when I suggest to them we can they look at me funny.

I do believe the day I quit laughing at myself and the vision of me running from the canner I will just a soon die.
