What are you canning now?

Checked this morning and my new 23 quart pressure canner is due to ship on the 29th. I have 5 pounds each of Garbanzo and Kidney beans waiting to be all canned up and added to the pantry.

Kim_NC I so admire you for having nothing but home canned items in your pantry. I told my husband all about it and he was equally impressed. Now if I could just win the Lotto and stay home and get it all done that would be great. However, I have to say that I have a wonderful husband who will get right in there with me and help so it goes twice as fast.

We had our canned pinto beans on Sunday with chicken tacos and they were fabulous - so creamy and tasted so fresh - what a big difference from the store bought junk!

Off to our local WinCo store to start stocking up on jars since our berries will be coming on here in the next couple of months and I need to get leftover fruit from last year out of the freezer. Cracks me up - that my signature jam that EVERYONE wants is the Jalapeno/Apricot and it is made with dried Apricots which right now I have to buy. My Boysenberry is the next best, then Mulberry and Blackberry.

Going to do some mixed berry jam/jellies this year and see how they are. Canning season will be on us before we know it.

Does anyone have a recipe for canned black eyed peas? I am growing some for the first time this year and I'm not really sure if I shoudl dry them and cook them or if I should start with the fresh ones? I've never had fresh ones to work with before.
 
Sandee, I have to try your Jalapeno/Apricot Jam. So glad you enjoyed your canned pintos - homecanned beans do taste so much better than store bought!

Isn't it nice to have a husband who helps? DH & I do a lot of produce prepping and jarring together. He is a huge help. Usually I finish up the canner operations alone....LOL, while he picks more veggies or fruit, or maybe grills supper.

I'm working on getting leftover fruits out of the freezer and into jarred jams/jellies too. Besides garden season soon to start here, we're getting ready to butcher both beef and pork! We need the freezer space!

BoerneChickens - we can blackeye peas using the same method as beans I linked above. It works for any dry peas or beans. Here's that link again:

Also, I make Hoppin' John with the same recipe - just add 2 Tbl. each chopped onion, chopped jalapenos, and chopped tomatoes to each jar with the prepared blackeye peas.

We prepfer to freeze our fresh blackeyes, butter beans, field peas, crowders, etc.
 
Urban dreamer, congrats on your pressure canner! I love doing things with the pressure canner that might take up valuable freezer space. When you find out exactly what setting on the stove makes the control rock gently write it down in your manual. It'll be quicker then the next time and you won't have to keep adjusting your temperature which can screw up a batch.

Im making apple jelly tomorrow. Black eye peas sound yummy. We have some dried one in the pantry I just might turn into seasoned black eye peas to can. First time for everything and so far everything has been a first! Zach thinks this canning business is a good idea. Yay for a supportive hubby!

Thats what I do too... but some people are asking me if I sell my pickles and jams and I was just wonder how much that stuff sells for, cause I have no idea.​

That is what I get asked for too, my dill pickles and mainly apple butter. If you do plan to sell, I think you have to go through a lot of paper work. Don't forget insurance to protect you if they get sick. Not worth it to me. I enjoy canning and giving. If you want to sell, I would compare prices at a farmers market- not a grocery store. I think jams would easily go for $2.00 or more for a 1/2 pint jar. Pickles may be the same for a quart jar. Just my guesstimate. Anyone else???
 
I just got back from our indoor market, which I sell jams & jellies. I sell the $5 for and 8oz jar....and I can't keep up with the demand. I also offer 50cents off the next purchase for any returned jars.
