Today I canned Banana Jam and Strawberry/Rhubarb Jam. I chopped a bunch of additional rhubarb for more jam making over the next couple days.
 
Hi, can someone please provide me with that yummy sounding Clover Jelly recipe? I too live in NC and if I had a picture of my yard to share!

The entire 10 acres is nothing but clover as it used to be a hay field. Would love to try my hand at making some. Thanks in advance.
 
I want to can some strawberry rhubarb pie filling (from Ball's Home canning book) but what do I do with it after it's jarred up. Dump and bake? It says to put in pints but won't you need 2 to fill a pie? so why not fill a quart? I know all you experts will come to my rescue.
 
I just made pineapple and strawberry jelly and it didn't set. Part of me doesn't care as I made it for ice cream anyways (awesome topping with some hot fudge for a banana split!)... so my question is this. Should I open all the jars, reheat and add more pectin to try again...? Or, I've ready I should give it a full day or 2 as it still may set? I've never had anything not set the same day. I'm thinking maybe its an issue with all the citrus from the pineapple?

Just asking for opinions, other wise I'll just call it "Strawberry and Pineapple Ice Cream Topping" rather then jam.
 
I'm replying now so I won't lose this thread again. I kept seeing it every now and again over the winter, but wasn't canning at the time. Next month will really kick off the harvest season here though, so I'll be gearing up soon and don't want to have to go digging to find all the other canning addicts and their recipes.

So I would open a jar at a time and may be some will set. If after two weeks if they don't seem to be setting at all then you can re-heat and add more pectin.

Have our Cocktail onions soaking in salt brine today so I can process them tonight when I get home from work. They are the best and make the occasional Friday night Martini taste really good.

Mulberries are starting to take on color and we should be up to our elbows in berries within the next couple of weeks. The chickens just happen to have their run under part of the tree and boy do they love the treat of berries. Hopefully our Blackberries and Boysenberries will come on at different times so I can keep up.
