What are you canning now?

Ok this was a great read, makes me wish I had all the parts to my pressure canner and plenty of money to spend at the farmers market...
Here is what I have been doing with my summer...

Strawberry Spiced Jam
Strawberry/ Blackberry Jam
Orange Jelly
Blackberry Jelly
Blackberry Preserves
Lemon Jelly
Apple Butter
Apple Jelly
Grape Jelly
and my most recent Scupplin' (or Scuppenon) Jelly.

Now the Pears are ready, Hopefully I can get a few 5 gallon buckets next week and I will be concentrating on

Pear Preserves
Pear Jam
Pear Butter

Also looking for a goo recipe for spiced Apple jelly and spiced grape jelly.

It did 80 romas in 1/10 the time it used to take me. I made a quart of sauce for dinner and a quart for the freezer.
No blanching, no peeling, no seeding. This thing is AWESOME!!!!

I made apple butter with it the next night

more free food!!!!! My mom's 90something year old neighbor told her that she has no plans to use ANY of her pears...she has two large trees. Mom said "well, I can pick some for you if you want" and she replied "no, I just don't want any of them. If you know of someone who can use them, take them". So tomorrow I will be going to my mom's and picking pears!!!! You just can't beat free food!!!! OH YEAH

In the morning I am canning some apple butter, apple preserves and if I have time I'm making more zucchini bread for the freezer. I went to 4 different stores today trying to find canning jars! The forth one had 3 cases left and I grabbed 2 of them.

All most forgot, I'm also making some apple pies of course! I'm making 2 for DH and a couple more for the freezer.

Wow, I'm so jealous, luvmychicknkids! I have one pear tree with lots of pears. Only problem is there only good enough for the deer in my backyard!

Finished 7 pints of bread and butter pic's. 7 pints of bread and butter mixed veggies. 6 quarts of dill pic's and 1 quart of dilled garden veggies.

apple butter
spaghetti sauce
I have 14 paper bags full of tomatoes, and a 5 gallon bucket full of tomatoes to go.

I have one of those, I love it. throw the veggies or fruit in there turn the handle and it is done. Only thing is when I went to make my sauce, it was juice. I have the wrong screen for sauce.

I totally agree!!!! We are loaded with applesauce and apple butter from free apples and now this. I feel quite lucky, indeed!!!!!

I got a quart of muscadines in my CSA basket. I like muscadine jelly, but we don't really eat that much jelly. Can I make muscadine jam? What if I combine them with pears or apples or grapes or something, for jam/preserves? We just don't like the taste of fresh muscadines.

DH is going to buy me the berry screen & the pumpkin screen. I'm not getting the salsa screen since no one in my house eats anything chunky!

I thought my sauce was juice at first until enough bulk built up on the screen to start falling into the bowl. It cooked down to perfect smooth sauce like everyone loves.
