What are you canning now?

Of course! It will also be on my blog. I've already put the garlic through the food processor and have added some vinegar to it, going to let it sit overnight to help develop a richer flavor. I should have it finished tomorrow night and hopefully on the blog by then as well.

I didn't do anything to them, but I did add a couple tablespoons of Southern Comfort on a whim. I didn't have time that night to finish so they sat in the fridge until the next morning. Don't know whether that might have helped.

I watched and sometimes helped my mom can as a kid year after year but never did it myself. Yesterday I canned my first tomatoes and all 4 pints popped. I know it's not something major, but it was my first time and without a pressure canner. One small step for me and the first of much much more!

Next up....a giant leap to crabapple jelly.

Teresa dunks them in a bath of lemon juice for a few minutes. She said she used a cup of lemon juice from a bottle to 2 cups of water. You can use asorbic acid which is just Vitamin C.
