What are you canning now?

Yesterday's efforts

16 quarts hot salsa
2 pints hot salsa
25 quarts tomatoes

Today I have

9 pints of Cherry Vanilla Brandied Pears

I adapted a recipe from the Ball book for brandied pears by adding vanilla, nutmeg and some left over cherries that had been soaking in a cherry liqueur for about 9 mos. I think it is going to be pretty tasty.



I have a few peaches and some plums I am undecided about.
 
I was shocked to see Walmart restocked their jars yesterday and everything was filled back up. I finally was able to get 3 boxes of the cheap 1/2 pint jars again rather then pay extra for the 'pretty' ones. Last year they told me they didn't sell that well, and when they were sold out, they were sold out!

I'm THRILLED because now I can start stocking up. Almost apple butter and pumpkin butter time.

Our Walmart is having trouble keeping up this year. When I was in town last week they literally just rolled the stock carts of jars out and left it there with a price list sign. They had to fill the shelves with the accessories, like lids, bands, sure jell, canners, etc. And it was already picked over pretty good! The truck had come in that morning

I'm new to canning!

I decided to go ahead and can my tomato sauce this year. I've looked at the Ball website, and there's waaaay too many pages on this thread to look for the answer to my question!

How long do I keep quart jars of tomato sauce in the hot water?

40 minutes for quart jars and 35 minutes for pint jars. Also, you should add 2 TBSP of lemon juice to each jar for quarts and 1 TBSP for pint sized jars. This aids in making sure that the tomatoes are acidic enough. Just add to each jar before you ladle the hot tomato mixture in.

We did hot peppers today. I use one part vinegar to one part water. I put garlic cloves and crushed red pepper in rach jar. The trick with peppers is to only put them in the canner for a minute or two. Any longer and they're mush.
