What are you canning now?

How do you use the homemade pectin in your jams? Do you change sugar amounts? Do you use specific recipes for it?

As a general guide, 2/3 cup of liquid pectin is enough to set 4 cups of low-pectin prepared fruit or fruit juice.
Interesting how to test the strength of your pectin with rubbing alcohol, which was found in both these blogs.

Interesting since I did my own a year ago and its still hanging out in the freezer. I need to try a batch of something and see if it works. Have you tried yours and how much did you use?

Guess I should have read all the other posts before asking my question! Thanks everyone.

I am making more of the pectin now. The apple jelly is done and waiting to see if it sets. I peeled 16 more apples (peel and core now cooking down to pectin mush) and chopped up to make apple butter in the slow cooker.

Mmmmm

I am going to make some 'rose' jelly tomorrow.... so I will try the pectin then, after I do a test with the alcohol.

I went to the farm with $4 to buy a couple lbs of the asian pears they had the other day. Apparently they are having a hard time selling them, they filled me a basket of 12.5lbs of pears for $4!!!!

Oh they are the best... but I'll just be peeling more and more and more... until I start losing my own skin I'm sure.

The grocery store here in town has ripe/overripe bananas at 15 cents a pound!!!!! OMG I bought 10 pounds. Anyone have any canned banana recipes other than the plain jam (banana, lemon juice, sugar)??????

'cause I think I'm going to make jams out of these and the cantaloupe I have tonight, then go back and buy more. 10 pounds of bananas for $1.50
