What are you canning now?

Spent the day canning

27 quarts tomatoes
3 quarts frog balls
7 pints beet relish
4 quarts hot peppers
6 quarts hot dill pickles

Problem is I bought new packages of ball jars w/lids and some of the lids have a stamp on the lid, from the inside... looks sort of like a V. Those jars don't seem to be popping sealed like all my others. I just thought they were changing their seal and never thought what if they are defective ?? Anybody bought any of those jars/lids ? It wasn't just one case of jars, there were some in several cases. Now I am looking at some of my hard work sitting on my kitchen table and thinking OMG what if they don't seal. Stuff is still hot but all the other jars have pinged already...

(20) 1/2 pints of peach jam, 10 pints of peachs, 17 quarts of tomatoe jucie, (11) 1/2 pints of pineapple jam.

I'am going to do a apple jelly, but I can't think of another kind of jelly or jam to make any body got any good ideals?????

Got up this morning and two of the jars of pickled jalapenos hadn't sealed. I assume they are like pickles and are fine to hang out in the fridge forever -- any thoughts? Of course, the one and only pint of the bunch, which is for my brother, didn't seal.
 
I believe I deserve some sort of mock parenting award.....I'm having my 2 1/2 year old wash tomatoes in the sink

Just finished caramel apple jam...thanks so much for the recipe:)
Had a 4 gallon batch of feta going at the same time. Talk about multi tasking:)

It only used 4 apples to get the 6 cups...I picked 30 lbs. I better look for an apple butter and a pie filling recipe.

I managed to can 7 quarts and 2 pints of plums in syrup, 3 quarts of plum juice, 5 pints of plum jam, 4 pints of plum jelly and one half pint of plum jelly. Wore me out! I took pics but I just dont feel like uploading them tonight.

Watermelon Jam

3 cups Sugar
1-1/2 cups finely chopped seeded watermelon (do not puree)
1/4 cup lemon juice
3/4 cup water
1 package (1-3/4 ounces) powdered fruit pectin

In a bowl, combine sugar, watermelon and lemon juice. Let stand for 10 minutes, stirring occasionally. In a saucepan, combine water and pectin. Bring to a boil; boil for 1 minute, stirring constantly. Add to the watermelon mixture; stir constantly until the sugar is completely dissolved, about 3 minutes. Ladle into jars. Cover and let stand at room temperature until set, about 24 hours. Process in boiling water bath for 10 minutes.

Yield: 4 cups.

Boil add to setting point, ladle into sterilized jars and WB for 10 minutes.
