You should try and locate your manual. If I remember correctly when first reading my Presto 23 quart canner manual - condensation is a problem. There is a little seal that can go bad and the gauge and seal need to be replaced. I think you can get them easily. Thanks, Yes we like a lot of garlic and we also throw in some red pepper flakes for color.

I never ate a pepper until I was in my 20's, but I love growing them and have grown to love eating them. The heat is still a bit much for me so I love the idea of pickling them. Thank you so much RockyToggRanch for all the info and pics

I'll be making this tonight, if I can remember to get to the store for the cornstarch

Canned Apple Pie Filling

4-1/2 C white sugar 10 C water
1 C cornstarch 3 Tbs lemon juice
2 tsp ground cinnamom 2 drops yellow food coloring
1/4 tsp ground nutmeg 6 pounds apples
2 tsp salt

1. In a large pan, mix sugar, cornstarch, cinnamon and nutmeg. Add salt and water and mix well. Bring to a boil
and cook until thick and bubbly. Remove from heat and add lemon juice and food coloring.
2. Peel,core, and slice apples. Pack the sliced apples into hot canning jars, leaving a 1/2 inch headspace.
3. Fill jars with hot syrup, and gently remove air bubbles.
4. Put lids on and process in a water bath canner for 20 minutes.

I'm a total beginner at canning- as in, I've canned one batch of zucchini relish. I was given a brand new Canner and Pressure cooker by a wonderful gal who is no longer well enough to can and I am determined to make this astoundingly generous gift worth her while, but I'm a little bit overwhelmed at the moment. My husband is so excited as this all brings back lovely childhood memories for him. He really, really wants me to can pickled beats and eggs together - this is one of his favorite memories. Can I safely do this? I didn't think I was supposed to mix veggies and non-veggies like this? If I can, any one got a recipe they wouldn't mind sharing? Thanks!
