I did not water bath last year for my apple jelly just heated the seal and rings in boiling water, and thats what I had planned on doing again, I have only made jelly for my first time last july 2009 so I am a newbie
 
Well results are in on my canned goods that I took to our local fair. Everything was judged this morning before the fair opened:

My White Pickles took a 1st place

Concord Grape took 1st

Clover Jelly took 2nd

Peach preserves, peach jam and relish took 3rd's

I entered a "gump" style loaf of bread and that took a 1st and I also entered eggs

and they took a 3rd.

Not too bad if I say so my self for my first time!

My grandma told me I could so I tried it. We eat the salsa so fast anyhow so I figured that even if it didnt seal we could eat it all up before it was wasted. I was pleasantly surprised! Good luck! Good job HenThymes! I love entering stuff in our fair too. I used to enter the State Fair when I was closer to it...that wait was terrible. Everyone sat there watching the judges tasting and rearranging...I met some great people who's jars or bread didnt place...then we would sit in the audience and eat bread and jam! It was so fun! I imagine those people are probably gone now--

I agree with you...if you have the competitive spirit enter your stuff! They are always begging for open class entries at our fair...competition is GOOD! Terri O
