What are you canning now?

So I made a green tomatoe/strawberry jam tonight that utilizes Jell-o, must admit it was superbly easy. Seems to set up relatively quickly. Has anyone else used these recipes? Have thoughts on them? Loves/Hates? I know it makes them non-vegetarian. I guess the tomatoe is more or less to create texture?

Welcome, Everyone for the pectin conversion info. Please post when you try it and let us know how well it worked for you.

According to the NCHFP:
Air is trapped in the closed canner during the process. Air trapped in a pressure canner lowers the temperature obtained for a given pressure (for example, 10 or 15 pounds pressure) and results in underprocessing. To be safe, USDA recommends that all pressure canners must be vented 10 minutes before they are pressurized.

I do believe any tomatoes have to have the right acidity to be waterbathed... I don't think even plain is ok.

I guess I should have been more specific. My books from Extension say that you can BWB process tomatoes if they have a TBS of lemon juice added to them to up the acidity. These are red-ripe/underripe varieties not the Low Acid ones. Hers should still be safe though wouldnt you think? Of course using the standard canning warnings when opening...Terri O

Sorry I can't help ya, Brag!

Kim.... hubby and I just called around and we finally found a walmart with jars left, they were on sale... so they moved them into the garden center and I guess no one knew they were moved there so they had some left!

I do watch Craigslist. Around here though, never many jars or other goodies show up. But hey....maybe someone will be cleaning up for Fall/Winter. I'll keep an eye out.

Oh Vfem...thanks for that info. I'll check the WalMart garden centers for 'dislocated jars'
