What are you canning now?

just checked on the jars thismorning; the jam seems to be lightly set, but still seperated, the can of syrup I used on my pancakes thismorning and it was very good, the preserves are far from being set, is it possible just to keep them as they are? the seals were all successful and they look like canned peaches. Since the jam is partially set but still separated, should I redo the batch?

I'm going to figure out the cucumbers next-wish me better luck with this canning process.

Yesterday I put up 6 1/2 pints of blueberry crockpot preserves.

I was going to make peach preserves today but burned out...crockpot is in use tomorrow so will do them on sunday.

Also making pickles sunday.
 
I need to go ahead and take some photos... we've been pickling like crazy lately. You don't even WANT to see my jam collection. My pantry is WAY packed and my peaches just started to ripen this week. Ut Oh!!!

An idea for those of you with failed jellies and extra 'syrups'...... Add them to your tea! I've been adding my failed jellies, a half pint at a time, to hubby's gallon of tea. He LOVES it. Doing the same for all the leftover syrups I had canned, like strawberry, ginger, etc as well as any remaining syrup in the jar after all the fruit is eaten. Gives him something different for a while instead of the same old same old. He has strawberry tea today, trying mango on him tomorrow (I just found those in the last box of packed kitchen things...)

Just something to think about.....

I planted these in 2008 and this is my first harvest. HOW EXCITING!

They did so well too, I even forgot to spray this year, and I covered most of them in row cover fabric bags I made to keep the bugs off. I'm quite pleased once I cut off the bad spots. Super juicy and by far the best peaches I've ever had.

We got one peach raisin this year.
But We should be irrigated by next summer, so we won't have drought raisins again.
I expected spontaneous combustion this spring.

I made the zucchini fruit chews with the very last baseball bat squash of the garden.
Kool-aid comes in pineapple flavor. They are absolutely wonderful!
I am trying to save them so I can see how they will work as a candied pineapple substitute in fruit cakes this winter.
I will grow many more squash next time. Five plants seemed like way too many plants, and now that I have a reason to grow it, I may never be able to grow enough.
I think a fresh ginger and sugar syrup would make a nice fruit chew too.

I was intrigued, but really did not think they would be this good. Most of the sugar remains in the pot with the syrup, so they can't be as bad as store bought gummies.
Black cherry is better than cherry, kiwi is just too different.

They also make mango kool-aid. I am going to stock up on it and the pineapple just in case it is not around next summer -when I have grown 12 tons of Zucchini.

I made another batch of bread and butter pickles this afternoon, with the sugar this time. Most of my canning experience is with tomatoes and beans. Seem to be missing something with my pickle making technique.

The recipe says to pack the cucumber in the jars, pour the hot brine over, seal and process for five minutes. I pack the cucumbers as tight as I can get them and still end up with this much pickleless space.
