What are you canning now?

Not sure what this means.

Anyhow I could kick myself for not planting more tomatoes. I have basil and found a recipe for Tomato Basil Sauce. Last year a friend had tons of tomatoes but he didn't plant as many this year either.

If I keep this recipe for next year, I can plant most of what I need. Good lord willing.,

There is a post about pesto right below this one.

I love watermelon wine!! To me it has a slightly black walnut taste, but I think I'm the only one who thinks this, who has ever tried my watermelon wine. go figure.

Thanks, I also found a recipe of sorts for freezing basil in cubes.

Hi! I'm a first time canner, and I made bread and butter pickles last week, and just yesterday I made dill pickles. I really enjoyed doing that. Our cucumbers are doing great this year.

Can't wait for my tomatoes to ripen. I have tomatillos too, and I'd like to use them to make salsa with the tomatoes.

Chicmom!

I am a first time canner too and I just made Nectarine Jam, Strawberry Nectarine Jam, and Grape Nectarine Jelly!

They all turned out REALLY great! Especially for my first time ever! My next venture is to start doing spaghetti sauce, basil and pickles!

I have a TON of squash this year, anyone know what I can do with it besides freezing?

Thanks!

Just stopping by to say I've been sick... no idea what is wrong, can't treat it if I don't know what it is?!

So when I get back to good I will get back to canning and hopefully show up with that picture of my pantry and what I've managed to get done. (Minus the 50+ jars I've sold already!)

I prefer this method too. Try christine ferbers book called "mes confitures" it is a french title but the book is translated to english. Its on amazon.com. Love her recipes, she has basics and fancy flavor combinations too. She treats jam as an art form and is famous for her jams in france. Dont be afraid, though, the recipes are easy.

Thanks . . . I will look into it.

I put up another 17 jars of blueberry jam last night. A friend of mine just moved into a house that has a few blueberry bushes / trees in the yard.
So, the blueberriers were FREE. I couldn't turn them down

I am up to almost 40 jars of jam.... I really don't need anymore.

I need to find a storage place for all the jam and salsa I have made this year. My green bean crop was not good this year.... so I did not get a lot of green beans put up. In another month, I am going to plant and try for a fall harvest.
