What are you canning now?

Well...we sorted through the 35 lbs of cherries and started working with the ripest first.

4 1/2 lbs went into Maraschino Cherries - ended up with 9 half pints - and they are heavenly (First time I've made those. They'll be a staple from now on, even though it takes two days to make them.)

Another 17 lbs or so went into a canner load of 7 qts - for pies and such over winter

2 batches of Cherry Jam used about 7 lbs

Made a cherry pie which is now cooling. So we've got about 5 or 6 lbs left. We may pit them and freeze them until the weekend. I have family visiting from PA then. We're thinking homemade cherry ice cream while our guests are here.

Great price. I'll have to go back to DG and check. Last I was there, they only had jars, but the local Big Lots' price was better for all sizes from jelly up to wide mouth quart. There is more than one DG closeby, maybe I need to check a couple of them.

Big Lots had the lids for $1.25/dz and lids/bands for $2.50/dz. All small mouth, no wide mouth. Darn

, but I bought the small mouth there.

Save A Lot has lids at $1.49/dz small mouth and $1.99/dz wide mouth.
Lids/bands for $2.99/dz small, wide mouth are $3.99.

edit: OK...*sigh*...I'm full of typos this evening

Our Big Lots had the same price as yours. Sure hope you can find them cheaper. Saving on bands and lids means being able to buy more jars.

I'll be doing my Squash Relish today. Didn't get a chance yesterday.....I took a friend of mine out shopping for some things she needed.

If you do a lot of canning and lids are expensive in your area, do an online search and buy a case. I got mine from Fillmore Container last year. They were more expensive than some people here are getting them, but cheaper for my area. I got three cases of cases, so I have lids for a couple of years. It is nice not to have to think about lids or drive all over creation looking for them, then to pay $3 for a box of 12....

Here's the direct link to the widemouth lids.

Price isn't too bad. I may buy a case & split it with friends.

Does anyone else do canning parties? I have several friends who want to learn to can or who plan to can. Last summer I got really bored doing all the canning by myself so invited friends to come can with me. No definitive plans yet but I'll probably do some stuff later this summer.

If you have gorup canning projects, do you have any tips for managing time/space well, as well as any general tips?

OK, had to share my ebay find.

I just bought "Bulk Case 500 Ball Wide Mouth Canning Jar Lids Red Ging" for $59.95, shipped.

Yes folks, that's 41.66 dozen wide-mouth jar lids for $1.44/doz. The same seller has lots of 1000 small-mouth jar lids (the ones with the fruit drawing on top) for $99.95. It's $1/20/doz. But I don't need/want that many.

There is a mature apricot on our property (was there before we moved in) and the fruit has "shot hole" disease. My husband has been reading up on it and will try and get it under control this fall. The question I have is - can the fruit be used for canning? Someone told me that due to the fact it is a fungal disease that I shouldn't. I obviously don't want to make anyone sick but hate to throw away 21# of fruit if I don't have to.

When you have chickens, you never throw away fruit.

Everything I've read about canning says to can the best, most perfect fruit & veggies you can find. Don't can anything that isn't perfectly healthy or your family may follow suit.
