What are you canning now?

I have been canning like crazy myself. So far I have 23 half pints of Strawberry Jam,6 half pints Blueberry butter,4 pints salsa,10 quarts garlic pickles,10 quarts bread and butter pickles, and 6 pints pickled greenbeans. A friend of mine planted a huge garden and now that everything is coming to harvest. The Marine Corp is sending him out of state to train for 2 weeks. His loss is my gain I guess he told me to pick his garden and do what I want with it.

Yesterday was my Birthday and my sweet husband got me a new canning book called "putting up" and a special rack for sterilizing my canning lids. I told him about the encouragement I got here to use the pressure canned and got it out and when I left this morning he was testing using water only. I have to brag - I have the best husband goin'

Just found this on Craigslist. Talk about a canning addict. http://seattle.craigslist.org/sno/grd/1237427081.html

You have a garden? Get a great deal at a fruit stand?
I can CAN/JAR your veggies or fruit for you. You provide the fruit/veggie, jars with bands and seals, I provide the expertise, equipment and time.
I have been canning my own garden fresh items for several years as well as pounds and pounds of great fruit deals I've gotten from across the mountains. Canning is the best tasting, most organic, and cost effective way to harvest.

Contact me!

I currently have Rhubarb (in light syrup) and freezer jam (strawberry and raspberry) available to sell outright or trade for good clean jars with bands.

Anyone have a recipe for FRESH dill pickled beets. I have beets to put up this weekend and also have fresh dill which came up all over the garden this year. Smells so divine! I have one recipe that calls for 2 teaspoons seed - any thoughts on converting that to some measurement for fresh.

Kinda hoping for a quick response here. I am canning green beans this afternoon. Has anyone ever added a few onions in the jar? Would like to try this as we always put them in our beans when we cook them fresh. BUT this is my first batch of beans and I dont wanna ruin them. Thanks, julie

I thought I'd just post here and ask since it is canning related-

anyone have an extra pressure canner that they would be willing to part with ? We're really into the whole homesteading and becoming self sustained ( at least in the garden department) but unfortunatly I am no longer working and my fiance just got cut down to a weekend a month of work... so the 300.00 canner is out.

We'd be glad to pay for it obviously- but we just cant afford a new one...
