What are you canning now?

Hey ya'll!!!

I've been working my regular job and getting over one illness after another, had fun hatching chicks, got my garden ripped up and ready to go! So much to finish before I can start canning again.

I checked my strawberries, covered in little green beauties right now... so I'll be back to this thread in no time!

Though, I have to admit. I really needed the break from canning. Just a little rest, let the canner rest, let me body and mind rest... because when I get going, there is no stopping! hahaha Miss you guys!

I dont even let them thaw. I put right in my kettle and as heating they thaw I mash them.
Add my sugar the sugar draws out juice.then add your pectin and let come to a boil.Boil for time recomended and jar it up.

The Ball Blue Book or the Ball Complete Book of Home Preserving. If you are going to get the Complete book, do yourself a favor and get the hardcover version. You'll thank yourself later!

I'm curious why you say this?

I have the Complete Book in soft cover and have never once thought I needed the hardcover.

It'll last longer. My mom's fell apart after 3 years and she had to buy a new one this year. I've dropped mine numerous times, bent it around nearly backwards, the dogs have dragged it around and it's still just fine.

If it's going to be a well used book, might as well spend a few bucks more and get one that can take the abuse and last a while.

Mine's going on five years old and is holding up great. I don't abuse books though; had that so pounded into me as a kid I couldn't even bring myself to highlight in a textbook in college. LOL! I guess if you're going to be tossing it around, bending it back and having dogs chew on it you would want to get one as sturdy as possible. Though, with that treatment, I'm thinking even a hardcover is only a matter of time.

Well in my defense at least we had a bit of an accident with some shelving while we were gone all day that did most of that damage, the dogs took advantage of it for sure. I'm a book lover and hate the thought of my books being abused in the slightest. Same for my mom, she bought hers at TSC and withing a year the binding was drying out enough for the pages to start falling out. Could just have been a bad batch but I'm more for the better safe than sorry line of thinking :)
