What are you canning now?

I blanched and peeled this batch then just ran the emultion blender throught the rest :)  Still took hours!

I scrapped the inside of two beans and did leave the husk in while the rest boiled.  It is very good and smooth, if that makes sense.  The vanilla adds a smoothness to the flavor.


IMO using Vanilla Beans is expensive and not worth the cost, compared to the liquid.  DW buys the good stuff at William Sonoma.   Last time I used bean, it was $10 for two beans. Ouch!  Never again.


Nope, ordered these on ebay. Split a pound with some friends. Cost me $7 for a quarter pound. Awesome deal. And great flavor!

Nooo rancher...Aceschix and I plus mommahen all bought our beans together and split them at Tabs house! I posted this two weeks back for you and the link we used on ebay to buy them! Weceach got over 20 huge beans for 7$ each!

I would try this, but I'd end up with more whiskey in me and then wouldn't care about BBQing anything. I'm Irish, its' in the blood. Or would be if I had any.

Too bad we aren't near, MsB...I have 2 dehydrators and I'd gladly lend 'em to ya to get your apples done :) I've got 3 good sized grocery bags of apples I've yet to start on.

Finished up the carrots tonight...well the last batch is in the canner with about half an hour to go. Ended up with about 20 pints, tho one managed to tip over in the first batch and all the water ended up in the canner. LOL, reckon we're having carrots for dinner tomorrow night.

Luckily, Dave and I are both off tomorrow, so we'll get to the apples. He's a HUGE help with this stuff...he washed and ran all 5 boxes of tomatoes thru the mill, does all the heavy lifting and today I peeled about 22 lbs of carrots and he cut 'em up for me. We have 2 apple peelers...one that will peel, slice and core, and one that just peels. So, we can both get to 'em...that'll get 'em prepped pretty quickly. I'm hoping to get a couple batches of butter going in crock pots as well as a batch or two of applesauce. I might be overly optimistic but that's what I'm gonna shoot for.
 
Anyone ever use the vintage aluminum box with trays style dehydrator? (we have an old one no one knows where it came from) It reminds me of the "suzy homemaker oven" i dearly wanted when I was 5 (Santa was good to me that year!)

We have a more modern one as well.


Mom and I feel like we are going broke this year buying jars. I looked for every sale and discovered that all those saved BedBathBeyond coupons made the jars there cheaper than I could find anywhere. Mom had lots and lots of quarts, but for just her and just me pints are easier to use. I used a stainless steel costco stock pot to can in the past two years-much easier to do the pints in that too. I use the pasta insert to hold the jars. I discovered a $10 coupon off $30 and used it to buy a canner and a box of jars at BBB and spend $25. So next year I am set!

Don't ya hate that?  Sounds like me...a day late and a dollar short.  Still, so many of these "gadgets" are convenient but not really necessary...just make things easier.


Exactly......BUT the ONLY gadget I COULD NOT live without is my Peel-Away apple peeler/corer/slicer. Saves me literally HOURS. I'm so glad I finally found it.....on top of the fridge :p

If you think $10 for two beans is steep you might want to ask DW what she's paying for "the good stuff" at Williams Sonoma.

Even your two $10 beans will make far more than the amount you can buy for the same price there.
