Okay, now I'm on the pumpkin bandwagon! My husband brought home two big pumpkins from a friend at work who was going to carve them but didn't get to it in time for Halloween. So, the last two days I have been slow cooking, pureeing, and freezing. Tonight I'm making pumpkin bread and have requests for pumpkin pie... Does anyone have a recipe for Pumpkin Fudge? Another one of my husband's friends said he had it once and it was amazing! Now I have a request for that too. Anyone seen a recipe for it?
 
Wow, you have been busy!! PUmpkin fudge-- that would be worth trying.

Scored two pumpkins today. One whole and one carved. Sat and fed the carved one to the chooks. SOme jumped away in fear and others pecked my leg for more.
 
I just made a copy of a Pumpkin Fudge Recipe the other day because I thought it sounded good. Usually I get offers of unwanted pumpkins from friends after halloween, no offers so far this year. I think the early cold froze all the pumpkins that were set out for decorations before Halloween even came.

Here is the recipe, let me know how it turns out!

Pumpkin Fudge
2 1/2 cups white sugar
2/3 cups evaporated milk
3/4 cup pumpkin puree
1 teaspoon ground cinnamon
7 ounces marshmallow creme
2 tablespoons butter
1 cup white chocolate chips
1 teaspoon vanilla extract

1. Line a 9x9 pan with aluminum foil and set aside.
2. Heat Milk and sugar over medium heat to a boil, stirring occationally with a wooden spoon.
3. Mix in pumpkin puree and cinnamon: bring back to a boil.
4. Stir in marshmallow creme and butter. Bring to a rolling boil. Cook stirring occasionally, for 18 min.
5. Remove from heat and add white chocolate chips and vanilla. Stir until creamy and all chips are melted.
6. Pour into prepared pan. Cool, remove from pan, and cut into squares. Store in a cool, dry place.
