What are you canning now?

A friend clued me in on her RA. If she stuck with the weight watchers diet she didn't need her weekly RA meds to manage the pain. Hmmmmmm . . . . . I try to stay away from real sugar and have some sugar free, low carb substitutes that are tastey. Trying to teach my kids the new recipes too. Sugar especially causes inflammatory responses in all the cells of our body.
 
OK - anybody ever can Pear Butter?
Last fall, I made a batch to try, I had some extra pears and thought the recipe in my Ball Canning book looked good. We like it OK, but I have no idea how to use this stuff up. I don't like it on toast - the spice mix is kinda strong for me, I have found the cloves and nutmeg are just too much to eat by itself.
Any suggestions?

Any suggestions?


I like to use it with corn chips instead of dip. It goes nicely with dried apple slices, on ice cream, and as a garnish for fish.
 
I made a large amount of pear butter a few years back. We ate it like apple butter- on biscuits. I have also added it to pancakes or waffles-it can replace the oil or part of the water or milk in a recipe. It really makes them taste yummy! Just experiment with the amount to get the right consistency. There are also recipes out there for apple ( pear) butter cakes or breads. The cake tastes like a spice cake and is nice and moist!
 
Excellent idea! I have jars of pear butter that I need to use up. I love spice cake... Face palm...I had been fiddling with dried spices when I could have cut the oil and used up some pear butter.
I love this site.
BYCians are smart practical people. I only have to think half as hard and get twice as far.

Make into an apple cake? Using the pear butter instead of apples?? I'm thinking of the type where the apples are slices and pressed into the batter in a 13x9. Perhaps smoth in a thin layer of batter, then place daubs of pear butter, then cover with daubs of more batter . . . .Yes, I tend to be inventive. lol THe mother of necessity requires it.
 
Last weekend, one of my customers gave me her grandmother's recipe for cranberries:
1 can of whole cranberries in sauce
Whole naval orange
pecans

Cut of the ends of the orange and then cut in half. Remove as many seeds as possible. Process the entire orange in a food processor. Add canned cranberries and pecans, Process until it reaches a good texture (??!!) Somewhat thick & chunky - not runny. Use on turkey, crackers & cream cheese.

She said they never canned it, but that I should try. I found a very similar recipe in the Ball Complete Guide, except it uses fresh or frozen cranberries and adds sugar. Since I had already purchased the canned strawberries, I thought I'd try those. So I put 1 whole naval orange in the food processor until smooth. Cooked it down with a little water until tender. Drained it. Put 4 cans of whole cranberries in sauce in a large pot, added ground oranges until it tasted right, added about a half cup of well-chopped roasted pecans. It needed a little sweetener, so I added a few drops of concentrated splenda. Put it in half-pint jars & BWB for 15 minutes. It came out really tasty. I've never been a big cranberry lover, but this is good.
