What are you canning now?

I've never had zucchini bread. I made a small
Batch of bread and butter pickles too. My mom and sister are already begging me for more. She said, I don't care if you have to go to the store and BUY the cucumbers, I want some more. ;). It made me feel good. The funny thing is, I like
Bread and butter pickles but I don't like straight sweet pickles.
 
I make a lot of muffins and zucchini bread. Plus I lie to my family and tell them I made "banana" bread(kids can't tell the difference) and I even put some of the shredded in my spaghetti sauce with other veggies to make a garden sauce, I don't can it but I just put it all together as I make the sauce. Hubby hasn't picked up on the veggie spaghetti sauce yet. I dice up a bunch of it and am supposed to put it in the spaghetti but the Hubby picks it out and won't eat it. I heard you can do a mini cake with it, just shred it up and make a little patty and fry it up, haven't tried that one yet. My dad fries them up in rings and just eats them that way as a side dish with a steak.
 
I use frozen zucchini to make zucchini bread later in the year when the zucchini is gone. We eat ALOT of zucchini bread or muffins. I ran out of the frozen stuff
last year and tried to plant a few more plants this year. Zucchini bread and pumpkin bread are our favorites. I planted a bunch of pumpkin too that I will can in cubes or puree and freeze for later pies, muffins, and breads.
Raech, your Grandpa must feel like me- You can never have enough zucchini. My Grandma used to send us a loaf or two of zucchini bread home with us every time we visited her when I was growing up. Thus started my love of zucchini. I have discovered it is good sliced and grilled with olive oil too.

With just the two of us we need recipes for just Two muffins. Even one of those little loaf pans is to big.

I have a mini muffin tin, that I love, but is a pain with 4 of us to feed. But I think you can freeze zucchini bread/muffins. I think you wrap it in plastic and then put it in a ziplock bag.
 
Just canned bread and butter pickles today was going to do muskmellon jam but have suddenly developed a severe allergy to it so not going to happen also want to do zucchini relish in the next couple of days.
 
Going to try blackberry jam for the first time today. I have a new blackberry patch and gathered about 4 gallons of berries that I froze. I'll probably run them through a food strainer using a berry screen, and just give it a try. It can't be too hard - blackberries, sugar, pectin. I think the straining will be the messiest part!
