What to do with a potential 80 pounds of tomatoes?

Dad had about 6 boxes of tomatoes rejected because the pallet shifted and the boxes got damaged but not crushed.

He is going to try to sell them to a few stores around town that buy extra, but worst case, I get to can tomatoes. I have plenty of salsa yet, but I need some ideas please.

Bring them to me. I know what to do with them.

I would can them all. You can then use them in different things as needed. You could make Tomato Basil Soup. I'd have to check my books for more idea.
 
Spaghetti sauce, chilli base, pizza sauce, ketchup, diced tomatoes, salsa. Lots of options out there, depends on what you normally eat.

I find making just plain old tomato sauce gives me lots of options come meal time. It can be turned into tomato soup, added to stews, used over stuffed peppers, turned into spaghetti sauce, etc.
 
For the diced tomatoes, do I have to peel them? My canning book doesn`t have diced tomatoes. Only 50# of tomatoes, but food bank is getting majority ofthe rest. So I am ok with that, going to share 25# with another fellow canner who helped me when I needed it.
 
Is that the x cut in the top, dunked in boiling water and then slip the skins off?  I have never tried it with tomatoes, but I do it with peaches.
I am thinking of canning some diced tomatoes and some fire roasted tomatoes next summer.


Yes it is. I don`t cut an x on them though, I just drop them in and wait for the splitting to start. Then you take a small knife and core them. Super easy really quick, if you want to watch I can put you to work with my 50 pounds of romas. :p
