What are you canning now?

Okay, we just finished canning 21 pints of applesauce.  When we pulled one of the jars out, we noticed something blue in the jar. We were puzzling about what it could be until we  found out the rubber had been coming off the jar lifter in the water.  Is our applesauce and all our hardwork ruined??? What would you do? Is it still safe to eat or do we need to throw it out? This is so disappointing! Thank you so much for your advice and input. 


You must have the same jar-lifter that I do. Mine is starting to peel, too! Although, I have yet to find pieces of it IN my canned goods...so far!
 
It sounds like the rubber was in the hot water you used to sterilize your jars or stuck to the inside of the jar when you lifted it out of the water.  Then you filled the jar with applesauce and canned it the appropriate amount of  time and the jar is sealed.  Personally, I would still eat the applesauce, although I would check the applesauce carefully and remove any blue rubber bits before eating it!  No way I would be throwing out 21 pints of applesauce!  Call me thrifty ... or cheap, whichever, they both fit.  In my opinion, the rubber has been sanitized so it won't poison you or anything, its just not so tasty.

I agree with WYoming. Pick out the blue pieces if you find them but don't throw away all your applesauce!
Today I canned Green Tomato Ketchup and Tomato Basil Soup. Mmmmmm..... The smell of it all..... Now I just have half a 5 gallon bucket of green tomatoes left! Have to get those creative juices flowing again tomorrow....
 
Sorry to interrupt the tomato talk, I can't join, all mine stayed green and unripe this year. Apples. I'm thinking Apple Chutney, Apple Juice, Apple Butter, Apple Jelly, Apples for Baking. Do y'all think I missed any?
 
Green Tomato Ketchup
6 lbs. Green tomatoes
3 lbs. Onions
2 tsp. Black pepper
1 TBSP. Dry mustard
1 tsp. Worcestershire sauce
2 cups vinegar ( I used apple cider vinegar because that is what I had but I think the original called for white vinegar.)
2 tsp. Pickling spices ( optional)
1 cup honey
Slice green tomatoes and onions, and place in a large pot with pepper mustard, and Worcestershire sauce. If using , put pickling spices in a small cheesecloth bag and add to mixture. Pour vinegar over all and cook for 4 hours over very low heat, stirring occasionally. Carefully purée in a blender; strain through a mesh strainer. Return to pot and bring to a boil. Add honey. Immediately fill about 6 pint jars, leaving 1/4" headspace. Process 10 minutes in a boiling water canner.
Note: I only had about 1/4 cup of honey on hand so I added 1 cup of brown sugar also. I also ended up with only about 4 1/2 pints rather than 6, but I know that I also cooked it down longer than 4 hours in between doing other things. It has a tart , spicy taste.

That is a great recipe!!! First one I have seen with honey----super.

That ketchup looks very tasty. I think the cider vinegar seems to me like it would give a nice flavor unlike white vinegar. Just my $0.02. Well I am going to try to get at it this w/e.

One last question for y'all. I have some rings that I pulled out of storage (They were my MIL's) and washed them up. They've got some rust and pitting. I was thinking any on the outside of the rings shouldn't be a huge deal, as long as the inside threads were good and clear. Agree or disagree? (I disposed of several that were really bad on the inside)

Agree. I have some that are kinda rusty too, but I do pitch the really bad ones also. I saw on here somewhere that if you take the rings off after the jars have sealed that it will keep them from rusting.
