What are you canning now?

Stupid question on the sauerkraut...

Can it be canned to preserve it once done? Or would that ruin the texture?

I don't care for the stuff but the wife loves it. Since I am the canner in the household, I'd love to be able to put some away for her.

Yes. The texture will change a little. The reason I don't can it is to keep the probiotics in tact. Doing the 5# in a jar allows me to enjoy fresh kraut instead. Once refrigerated it stays fresh for months. I can always get some more cabbage & make a new batch.

I might mention, for those wanting to make a larger crock type batch, there's a new kind of crock on the market with a built in water lock seal that come in several sizes. Expensive though, in my opinion

Looking for recipes to use up several jars of rhubarb that I canned last year before it comes time to can this year's rhubarb! Guess we don't eat rhubarb like I thought we would. I just hated to see our two big plants go to waste! What I couldn't give away, I canned.
 
Use it to make strawberry rhubarb jam? Or any other fruit and rhubarb jam?

Looking for recipes to use up several jars of rhubarb that I canned last year before it comes time to can this year's rhubarb!  Guess we don't eat rhubarb like I thought we would.  I just hated to see our two big plants go to waste!  What I couldn't give away, I canned.

Rhubarb Conserve or Jam sounds good. I think I could just use my canned rhubarb as spreadable fruit on toast. I added sugar when I canned it so it should be good! Maybe a strawberry rhubarb crisp. I talked to my step-mom and she actual has a cake recipe where you put the uncooked? batter in the pan, then put rhubarb on top, pour a pint? of whipping cream over the whole thing and bake. Yes, bake after pouring cream on top. I know my directions are not clear at all...I will have to confirm her recipe next time she visits. It seems like a change from the standard rhubarb pie or rhubarb crisp. Canned rhubarb poured over vanilla ice cream sounds good, too. I must be hungry!
