What are you canning now?

Didn't technically CAN it, but I did make a nice batch of homemade mayonaise, filled a whole quart jar and is it ever tasty! Pulled fresh new potatoes and onion from the garden and made a lovely potatoe salad. Tonight I need to can some pickled beets, trying to do it all while we have this little cool snap

Picked a couple of handfuls of sugar snap peas today, they didn't make it anywhere but my mouth!

Picked more white pickles and had enough to can three more quarts, yum!

Tomorrow is canning more Clover Jelly and checking the neighbors garden for goodies, their on vaca and ask us to look after it.

Put up 5 pints & 1 quart of dill pickles -- that's the last of this season - I did add the grape leaves in the jars to see if that will make them extra crispy -- will let ya'll know.
Next on the agenda is tomatoes--lots & lots & lots of tomatoes -- I've been freezing them whole until I got time to deal w/'em. --well, it's time!

Your pickles look great. I've never seen that variety before. They look kinda "stumpy" - not real long and slender. Wish I could reach into the screen and grab one!!

Thank you, these pickles are really hard to describe but very delicious, I will never grow green ones again. You do pick them when they are just a few inches long, I think the jar makes them look stumpier than they really are.

HenThymes - Those white pickles look delicious! Very pretty in the jar too. We planted white cucmbers, but only one vine sprouted. It has blossoms now. I'm hoping to at least get a few to try.

Everyone - please add any recipes you post to the "Attn! Recipe Help Needed!" sticky Miss Prissy has at the top of the forum (https://www.backyardchickens.com/forum/viewtopic.php?id=125568). Once posted there, Terrielacy comes through periodically and adds them to the Recipe Index sticky. This gives us all a nice list of linked recipes in the various threads.

Last year some of us went through the canning thread and 'caught up' all of the posted recipes. It'd be great if we continued with this year's additions.

To post your recipe to the sticky: Use the name of the recipe and a link to your original post. To get a link that goes directly to your original post, click the date/time stamp of the post. Then copy the URL from your address bar.

I went to Kroger yesterday to get the chipotle peppers and freezer jam pectin for the blackberry chipotle jam, but couldn't find any of the freezer jam pectin. I decided that I really wanted to try the chipotle jam so I followed the black berry recipe I had been using and just added the peppers and adobe sauce. The flavor was good when I was mixing it; sweet but with a little heat. I checked them this morning and they seem to have set up just fine. Tonigt I'm planning on pouring a bit out on top of some softened cream cheese and having a little late night snack.
 
All I've done this year is strawberry jam and cherry jam (strawberries were store bought, but the cherries came from our tree). Can't wait till my garden is ready for some real canning! I'm going to do pickles, tomatoes, corn, and green beans.
 
I made four pints of whole corn and right after made five 1/2 pints of corn cobb jelly. BTW, the corn cobb jelly is

!!! And then I made two loafs of apple bread. Since I've got into canning (back in March) I've made apple jelly, blueberry jam, white grape/peach jelly, corn cobb jelly, black eyed pea soup, green beans, garlic pickles, and corn.


I'm done cooking today though.
