What are you canning now?

It's a southern thing. They are processed in the shell in a salt water brine. They are mother's milk to southern children and ambrosia to southern adults.

I really don't know how to explain them to you as there is nothing like them.

oh that sounds super yummy! Mine doesn't have cabbage or the tumeric or ginger - I may have to try your variation this year! mmmm!

But if you like it sweet add a little vinegar at a time, but if you like it tart....go ahead and add all the vinegar.

Yesterday our neighbor came over with enough wild blackberries to make 2 batches of jam. He wanted to learn how, so DH & I had volunteered to do it with him. What fun! Other than DH, I've never given canning lessons to a man. We each ended up with 9 jars of jam.

In the evening I chopped up enough oversized cucumbers, etc to make 16 half-pints of Sweet Pickle Relish. Over the next couple days I plan to make Squash Relish. Then Saturday at the farmers market, all of our CSA members will get a choice of relish to go with their share boxes.
 
Just wondering if anyone has a good recipe for sweet pickle relish. I've made enough dills now, and the love doesn't care a whole lot for bread and butters, but there's nothing better than a huge dollop of sweet relish in tuna salad.
 
Kim, you amaze me! If I even SUGGESTED teaching my husband, he would roll his eyes and walk outside and disappear for hours. LOL

I'm going to try to collect more clover today. I can't wait until my honeysuckle reblooms... usually starts again at the end of next month.

Ingredients

* 4 cups ground cucumbers, unpeeled
* 1 1/2 cups ground green bell peppers
* 3 cups finely diced celery
* 1/4 cup salt
* 3 1/2 cups sugar
* 2 cups white vinegar
* 1 teaspoon celery seed
* 1 teaspoon mustard seeds
* 6 teaspoons chopped dill (optional)

Directions

1.Combine all veg in a large bowl, sprinkle with salt, add water to cover and let stand for 5 hours.
2.Drain well and press out remaining liquid.
3.Combine remaining ingredients and bring to a boil.
4.Stir until sugar is dissolved.
5.Stir in veg and simmer for 10 minutes.
6.Pack into clean hot jars leaving 1/2 inch head space.
7.Process 10 minutes in a boiling water bath at altitudes up to 1000 feet.
